This 70% polished Omachi rice is specially cultivated at a sustainable farm called “Mame Farm” in Kurashiki, Okayama, and is brewed with a Kimoto technique. It has a moderate ripeness, a quiet and silky umami, and an acidity that supports the aromatic overtones. It has a nice lingering aftertaste. This is a Omachi for mature drinkers! Please raise the temperature to around 55 degrees Celsius and enjoy the sharpness and acidity while it warms up and cools down to slowly experience the deliciousness of the rice.
